Preparation
Step 1: Make the Oreo crust
Separate the Oreos from their creamy filling. Place the dark cookies in a freezer bag and crush them with a rolling pin until you get a fine powder. Pour the powder into a bowl and add the melted butter. Mix with a fork until the powder is well coated with butter. Line the bottom of a 22 cm tart pan with this mixture, pressing firmly with the back of a spoon. Refrigerate for 30 minutes.
Step 2: Prepare the white chocolate mousse ganache
Soak the gelatin sheets in a bowl of cold water. Chop the white chocolate into small pieces and place in a bowl. Heat 100 ml of heavy cream in a saucepan until simmering. Pour it over the white chocolate and let sit for 2 minutes before gently stirring until smooth. Add the squeezed gelatin and mix. Incorporate the remaining cold heavy cream (150 ml) and cover with plastic wrap directly on the surface. Refrigerate for at least 2 hours.
Step 3: Prepare the cream cheese mousse
In a large bowl, whisk the cream cheese with the powdered sugar and vanilla extract until smooth and creamy. Gently fold in the reserved Oreo creamy filling. Remove the white chocolate ganache from the fridge and whip it with an electric mixer until it doubles in volume and forms stiff peaks. Fold the white chocolate whipped cream into the cream cheese mixture using a spatula, lifting the mixture gently.
Step 4: Assemble the tart
Remove the crust from the refrigerator. Pour the cream cheese and Oreo mousse over the crust, smoothing the surface with a spatula. Tap the pan lightly on the counter to release air bubbles. Roughly crush 3 Oreo cookies and fold them into the mousse for added crunch. Refrigerate the tart for at least 4 hours, ideally overnight.
Step 5: Decorate and serve
Carefully unmold the tart by running a thin heated blade around the ring. Arrange the remaining Oreo cookies, cut in half, on top in a crown pattern. Sprinkle with dark chocolate shavings. Serve well chilled, straight from the refrigerator.
