Preparation

Step 1: Preheat the oven

Preheat the oven to 190°C (375°F).

Step 2: Prepare the apples

Peel the apples, remove the cores and seeds, then cut them into medium cubes (about 2 cm).

Toss with lemon juice to prevent browning.

Step 3: Cook the apples slightly

In a skillet, melt 20 g of butter over medium heat.

Add the apple cubes, half the brown sugar (40 g), the cinnamon and the vanilla sugar.

Sauté for 5 to 7 minutes, stirring occasionally, until the apples begin to soften but are not fully cooked.

Transfer the apples to a buttered baking dish and spread evenly.

Step 4: Make the crumble topping

In a large bowl, mix the flour, the remaining brown sugar (40 g) and the rolled oats if using.

Cut the cold butter into small cubes and add to the flour.

Rub the butter into the flour with your fingertips until the mixture resembles coarse sand with some larger clumps.

Add the chopped walnuts or almonds if desired.

Step 5: Assemble the crumble

Sprinkle the crumble topping evenly over the apples, without pressing down.

Step 6: Bake

Bake for 25 to 30 minutes.

The topping should be golden and crunchy, and the apples should be bubbling around the edges.

Step 7: Serve

Remove from the oven and let rest for 5 minutes.

Serve warm in shallow bowls, with a scoop of vanilla ice cream, custard or whipped cream.

💡 Tips & variations

  • Choose slightly tart apples to balance the sweetness of the crumble topping.
  • The butter must be very cold for a sandy crumb texture — work it with your fingertips.
  • Don't overmix the streusel: it should stay lumpy for maximum crunch.
  • Feel free to add berries or pears to vary the flavors.
  • Serve warm, absolutely, with a scoop of vanilla ice cream or custard.
