Nutella Jam

Preparation
Step 1: Prepare the ingredients
Take the Nutella, butter and heavy cream out to room temperature 15 minutes before starting so they are soft. Break the dark chocolate into small pieces and set aside. This tempering step guarantees a perfectly smooth, lump-free texture.
Meanwhile, bring a saucepan of water to a boil and submerge the glass jar and its lid for 10 minutes to sterilize them. Drain and leave upside down on a clean towel to dry.
Step 2: Melt the chocolate
In a heavy-bottomed saucepan, place the chocolate pieces and the diced butter. Melt gently over a bain-marie or very low heat, stirring regularly with a silicone spatula. The chocolate should not exceed 50°C to retain all its shine and creaminess.
Once the mixture is smooth and homogeneous, remove from heat and let cool for 2 minutes — the residual heat will continue to melt the last pieces.
Step 3: Assemble the jam
Pour the Nutella into the saucepan with the melted chocolate. Add the sweetened condensed milk, heavy cream, vanilla extract and the pinch of salt. Whisk vigorously until you get a perfectly smooth, shiny and homogeneous cream.
Return to very low heat and heat for 5 minutes, stirring constantly with the silicone spatula. The jam should thicken slightly and form a ribbon when you lift the spatula — it coats without being too thick.
Step 4: Cook to the right consistency
Continue cooking for 5 to 7 more minutes, always over low heat, stirring constantly. The jam should gently bubble and gradually thicken. To test, drop a small amount on a cold plate: it should set without spreading.
Be careful not to overcook — the jam continues to thicken as it cools. If it becomes too thick, add a tablespoon of heavy cream to loosen it.
Step 5: Jar it
Pour the still-hot Nutella jam into the sterilized glass jar using a funnel and spatula. Fill to within 1 cm of the rim, then screw on the lid immediately. Turn the jar upside down on its lid for 5 minutes — this creates a vacuum seal for better preservation.
Let the jar cool completely at room temperature before turning it right side up and storing it in the refrigerator.
Step 6: Serve
This Nutella jam is delicious spread on crêpes, waffles, French toast or well-toasted bread. It is also wonderful served with fromage blanc or as a topping for plain yogurt for an indulgent breakfast.
It keeps for up to 3 weeks in the refrigerator in a tightly sealed jar. Take it out 10 minutes before use so it returns to a creamy, spreadable texture.
