Preparation

Step 1: Toast the pecans

Toast the pecans in a dry frying pan over medium heat for 3 to 4 minutes, stirring often, until they smell nutty.

Set aside a handful for the topping and let the rest cool slightly.

Step 2: Heat the flavored milk

Pour the milk into a saucepan with the brown sugar, cinnamon and half of the toasted pecans.

Warm over low heat for 5 minutes without boiling, stirring occasionally, so the milk soaks up the flavors.

Step 3: Blend the drink

Off the heat, add the crumbled shortbread cookies and blend with an immersion blender for 1 to 2 minutes.

The drink should turn perfectly smooth and slightly thicker. Stir in the heavy cream and salted caramel, then blend again briefly.

Step 4: Reheat and adjust

Return the saucepan to low heat for 2 minutes, whisking, without boiling, until the drink is piping hot and homogeneous.

Taste and adjust the caramel to your liking.

Step 5: Serve

Pour the drink into two mugs.

Top with a generous spoonful of whipped cream, a few toasted pecan pieces and a drizzle of salted caramel.

Serve immediately, steaming hot.

💡 Tips & variations

  • Toast the pecans in a dry pan for a few minutes: they release an incomparable hazelnut aroma that perfumes the whole drink.
  • Keep a few pecan pieces and one cookie for the topping — the crunch contrasts beautifully with the silky drink.
  • For an even richer version, swap half the milk for almond milk or stir in a spoonful of praline paste.
  • Serve right away, piping hot, topped with lightly vanilla-flavored homemade whipped cream.
