Buttery vanilla shortbread cookies

250 g All-purpose flour
125 g Unsalted butter (softened)
100 g Sugar
1 Egg
1 Vanilla pod
1/2 packet Baking powder
1 pinch Salt
50 g Icing sugar (decoration)

Preparation

Step 1: Cream the butter

Beat the softened butter with the sugar until light and creamy. Add the scraped vanilla seeds and mix.

Stir in the egg and beat for a few more seconds until smooth.

Step 2: Make the dough

Add the sifted flour, baking powder and salt, then bring the dough together by hand without kneading. Shape it into a ball, wrap in cling film and chill for 30 minutes.

Step 3: Cut out the cookies

Preheat the oven to 180°C (350°F). Roll the dough out to 5 mm thick on a floured surface and cut out shapes with cookie cutters.

Place the cookies on a baking sheet lined with baking paper, spacing them 2 cm apart.

Step 4: Bake the cookies

Bake for 10 to 12 minutes: the edges should be just golden. Let them cool for 5 minutes on the sheet, then transfer to a wire rack.

Step 5: Decorate and serve

Dust the cooled cookies with icing sugar. Serve them with a glass of milk or a cup of tea, and keep them in an airtight container for up to a week.

  • Split the vanilla pod and scrape out the seeds with the back of a knife: they flavour the dough far better than any extract.
  • Do not overwork the dough, or the cookies will be hard; stop as soon as it comes together into a ball.
  • Let the cookies cool for 5 minutes on the sheet before moving them: they are fragile straight out of the oven.
