Preparation
Step 1 : Roast the pecans
Preheat the oven to 170°C. Spread the pecans on a baking sheet and roast for 5 minutes, until they give off a toasted aroma.
Let them cool, then chop coarsely with a knife. Set a handful aside for decoration.
Step 2 : Make the brown butter
Melt the butter in a saucepan over medium heat until it foams and turns a beautiful amber colour, watching carefully.
Remove from the heat and let cool for 5 minutes. Brown butter adds a subtle hazelnut flavour that elevates the pecans.
Step 3 : Mix the ingredients
In a bowl, whisk the brown butter with the brown sugar, sugar, egg and vanilla extract until smooth.
Add the flour, baking powder and the pinch of salt, then mix with a spatula. Finally fold in the chopped pecans.
Step 4 : Shape the cookies
Drop spoonfuls of dough onto a baking sheet lined with baking paper, spacing them about 5 cm apart.
Press the reserved pecans onto each cookie to push them lightly into the dough.
Step 5 : Bake and cool
Bake at 170°C for 12 to 15 minutes, until the edges are golden.
Let cool for 5 minutes on the sheet before transferring to a wire rack. These cookies keep for a week in an airtight container.
