Preparation
Step 1: Brown the butter
In a small saucepan, melt the butter over medium heat until it turns a hazelnut color and releases a nutty fragrance. Stir regularly to ensure even heating without burning.
Once golden, remove from heat and strain through a fine sieve into a bowl to remove solids. Let it cool slightly while you prepare the rest.

Pour the browned butter in a steady stream into the egg mixture while whisking gently. Add the coconut milk, vanilla extract, and rum. Mix until smooth and fragrant.
Pour this liquid mixture over the dry ingredients and fold gently with a spatula. Do not overmix — stop once just combined.
Step 4: Rest and mold
Cover the bowl with plastic wrap and let the batter rest in the refrigerator for 20 minutes. This allows the coconut to hydrate and the flavors to develop.
Grease and flour your mini-muffin or financier pan. Distribute the batter using a piping bag or two small spoons, filling each cavity three-quarters full.
Step 5: Bake
Preheat the oven to 180°C (fan-forced). Bake for 16 to 18 minutes until golden on the edges and slightly firm to the touch but still soft inside.
